Receta Blue Cheese Potato Salad
This is a perfect accompaniment to burgers and sandwiches served at picnics/BBQ's. Best part, it can be prepared ahead.
Ingredientes
- 5 Lbs. Red Potatoes
- 1/2 Cup Dry White Wine
- 1 Tsp. Salt
- 3/4 Tsp. Coarse Ground Black Pepper
- 1 1/4 Cup Fat-Free Mayonnaise
- 1 1/4 Cup Fat-Free Sour Cream
- 2 1/2 Tbsp. Dijon Mustard
- 2 1/2 Tbsp. Cider Vinegar
- 1/2 Lb. Blue Cheese, Crumbled (8 ounces)
- 5 Whole Scallions, Sliced Thin
- 1 1/2 Cup Celery, Diced
Direcciones
- Place potatoes in large pot. Cover with cold water. Boil until tender. Drain. Cool slightly. Peel potatoes. Cut into 1 inch pieces. Transfer to large bowl. Add wine, season with salt and pepper and toss to coat. Cool completely.
- Combine all remaining ingredients. Mix with potatoes. Adjust seasoning. Store in refrigerator until serving time.
- Tip: If you like dill add 1/8 cup fresh dill weed to this.
