Receta Blueberry Sour Cream Coffeecake
Ingredientes
- 1/2 cup plus 2 TBSP butter at room temperature (divided)
- 1 cup sugar
- 2 eggs
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 cups plus 1/3 cup (divided)
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2/3 cup packed brown sugar
- 1 tsp cinnamon
- 1 1/2 cups fresh blueberries, washed and drained
Direcciones
- Heat oven to 350 degrees
- In a large mixing bowl, cream 1/2 cup of butter with stand mixer, until blended.
- Gradually add sugar and beat until light and fluffy, about 2 minutes
- Beat in eggs, sour cream and vanilla 2 minutes more.
- In a medium bowl mix together 2 cups of the flour, baking powder, baking soda, and salt.
- Mix into the creamed mixture.
- Pour half of the batter into a greased 9 x 13 inch baking pan, spread evenly
- In a small bowl, mix brown sugar, cinnamon, remaining 1/3 cup flour and remaining 2 TBSP butter until crumbly.
- Sprinkle 1/2 of the topping over batter in pan
- Sprinkle blueberries evenly over the topping
- Drop remaining batter over the blueberries and spread evenly over blueberries
- Sprinkle with remaining topping
- Bake at 350 degrees for 1 hour
- Remove from the oven and let cool
