  • 2 c. all-purpose flour, (or possibly 1 c. each of white & whole wheat flours)
  • 1/4 c. toasted wheat germ, (optional)
  • 2 tsp baking pwdr
  • 1/2 tsp salt
  • 1/4 c. sugar
  • 2 lrg Large eggs
  • 3/4 c. lowfat milk
  • 1/4 c. vegetable oil
  • 1 c. boysenberries

  1. Preheat the oven to 350 F. Generously grease muffin tins or possibly prepare paper baking c..
  2. In a medium bowl, combine flour, wheat germ, baking pwdr, salt, and sugar.
  3. In a small bowl, beat the Large eggs, slightly, the add in the lowfat milk and oil. Pour the egg mix into the dry ingredients and mix well. Blend in the boysenberries.
  4. Spoon batter into muffin tins, filling each c. 2/3 c. full. Bake 25-30 min or possibly till golden and tested with a toothpick; serve hot.
