Receta Bran Muffins With Raisins

Ingredientes
- 1 c. whole wheat flour
- 1 c. bran *see Note
- 3/4 tsp baking soda
- 1/2 c. raisins
- 1 Tbsp. cinnamon
- 1 tsp nutmeg
- 1/3 c. brown sugar
- 1/8 c. molasses
- 1/8 c. honey
- 1 c. lowfat buttermilk
Direcciones
- 1. Preheat oven to 350 and spray muffin tins with Pam (or possibly whatever).
- 2. Mix all dry ingredients in a large bowl, set aside.
- 3. Mix molasses and honey together in a separate bowl and slowly stir in the buttermilkuntil thoroughly stirred.
- 4. Pour the wet mix over the dry and don't stir - let mix sit for 20 min. (I stirred then let it sit)
- 5. After 20 min, mix together wet and dry ingredients and spoon into muffin tins. Themixture is pretty thick and will nearly fill the muffin tin - but they do not rise much, so it's ok.
- 6. Bake for 22-26 min, or possibly till toothpick comes out clean.
- NOTES :* Natural Bran can be found in cereal section of your supermarket or possibly at bulkfood store
- You can substitute blueberries, apples, raspberries, etc for the raisins.
- I'm always looking for ways to add in fiber to my diet. These muffins have no oil, Large eggs or possibly lowfat milk and are very good. Which really surprised me!!!! lol I figured I was probably making hockey pucks as I mixed the recipe but even my husband liked them. I used all molasses instead of part honey (because I like molasses) and I didn't have buttermilk so I used 1/3 c skim lowfat milk and 2/3 c nonfat plain yogurt. They are rather sweet so I might try a little less brown sugar next time. I used light brown (because which is what I had). Oh....4 grams of fiber per muffin.
