Receta Broccoli Cheddar Soup

Ingredientes
- 1 head broccoli, minced
- 1 x (2 oz) package cauliflower soup mix
- 4 c. water
- 1/2 c. lowfat milk
- 1 x to 2 c. grated Cheddar cheese
Direcciones
- In a medium sized stock pot, over medium heat, combine soup mix and water, stirring constantly till well mixed. Add in broccoli florets, partially cover and simmer for 5 - 10 min stirring often. Once broccoli is tender, place soup in a food processor or possibly blender and puree. Once blended return soup mix to stockpot, add in lowfat milk and stir. Add in cheese to soup mix keeping 1/2 c. set aside. Stir soup till cheese is melted and then sprinkle remaining 1/2 c. cheese on top of individual soup servings.
