My mum used to make these on a fairly regular basis. they are unbelievably tasty.
These little patties are an ideal accompaniment to basic pork chops.
They can be served with hot or cold meats and are an ideal way of getting your children to eat more vegetables.

  • 450g/1lb potatoes
  • salt and pepper
  • 70g/2½oz butter
  • 250g/8oz cabbage, shredded
  • 3 tablespoonfuls water
  • 3-4 tablespoonfuls sunflower oil
  • 1 onion, finely chopped

Direcciones

  1. Cook the potatoes for 25 minutes in a pan of lightly salted boiling water, then drain, peel and dice.
  2. Place them in a bowl with 55g/2oz of the butter and mash until smooth. Season to taste with salt and pepper.
  3. Meanwhile, place the cabbage, water and remaining butter in a large heavy based saucepan and cover. Cook gently for 10 minutes, or until tender. Mix the cabbage and mashed potato together and season with more salt and pepper.
  4. Heat half the oil in a frying pan. Add the onion and cook, stirring occasionally, until softened.
  5. Tip the softened onion into the potatoes and cabbage and mix thoroughly. Add more seasoning if required.
  6. With lightly floured hands, shape the mixture into four rough cakes, each about 2cm thick.
  7. Wipe the pan clean with kitchen paper, then add the oil and heat.
  8. Put the cakes into the pan and fry over a medium heat for about 15 minutes, turning once, until golden brown and crisp.
  9. Serve immediately.
  10. Note: You could add carrots, peas or Brussels sprouts to this recipe if you wish. Just cook and add to the cabbage and mashed potato before cooking. Also, many people like to serve the portions with a poached egg on top.
