Receta Bubble And Squeak Topped With Butter Fried Egg

Ingredientes
- 2 ounce Butter
- 2 ounce Bacon, finely diced
- 1 Tbsp. Chives, snipped
- 1 x Clove garlic, crushed
- 3 ounce Leek, cleaned and sliced
- 2 ounce Carrot, grated
- 4 ounce Green cabbage, finely shredded
- 12 ounce Cooked potatoes, mashed
- 4 ounce Butter
- 4 lrg Large eggs Dressed salad leaves
Direcciones
- Heat the 2oz butter, add in the bacon, chives, garlic, leek and carrots.
- Cook for 5 min without excessive colour. Add in the green cabbage, season with salt and pepper. Mix this mix into the mashed potato, check, and if necessary, adjust the seasoning. Divide the mix into four portions and shape to resemble a fish cake.
- Heat the 4oz butter in a large frying pan. Once warm, add in the potato and vegetable cakes. Cook on both sides till golden. Fry the egg in a separate pan. Remove the potato cakes and place on a plate garnished with dressed leaves. Present a fried egg on top of each cake.
