Receta Butternut Squash and Rocket Salad
An easy vegetarian salad dressed up with a sweet balsamic vinaigrette.

Ingredientes
- Butternut squash
- Large handful of fresh rocket
- Spring Onion
- 200g can of lentils
- Sesame seeds
- Sunflower seeds
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp soy sauce
Direcciones
- Lightly drizzle butternut squash cubes with oil and roast for 20 minutes at 190 degrees C.
- Mix honey, soy sauce, balsamic vinegar and a bit of olive oil to make dressing.
- Arrange rocket on plate, tip over lentils, then the squash
- Sprinkle over seeds and spring onions.
