Receta Cajun potato salad
Ingredientes
- 2 pounds small red potatoes
- 1/2 cup chopped red onion
- 1/2 cup sliced green onion
- 1/4 cup minced fresh parsley
- 1/2 pound cajun sausage, sliced
- 6 tbsp cider vinegar, divided
- 6 tbsp oilve oil
- 1 tble dijon mustard
- 2 garlic cloves, minced
- 1/2 tsp pepper
- 1/4 to 1/2 tsp cayenne pepper
Direcciones
- Cook the potatoes in boiling salted water for 20-30 miutes or until tender, dran
- Rince with cold water, cool completely, cut into 1/4 inch slices, place in a large bowl.
- Add onions, parsly and 3 tbsp vinegar and toss
- In a medium skillet, cook sausage in oil for 5 to 10 minutes or until it begins to brown well
- remove with slotted spoon and add to potatoes mixture
- To drippings in skillet, add mustard, garlic, pepper, and cayenne pepper and remaining vinegar, bring to boil, whisking constantly
- Pour over salad and toss gently, serve immediately.
