Receta California Style Ratatouille

Ingredientes
- 1 x butternut squash, peeled, and, diced
- 1 x yellow summer squash, diced
- 1 x zucchini, diced
- 1 x pepper
- 1 x sweet yellow pepper, diced
- 2 c. diced portabello mushroom, stems removed
- 1/2 x onion
- 2 Tbsp. extra virgin olive oil
- 1 pch salt
- 1 pch black pepper
- 1 Tbsp. crushed or possibly minced garlic
Direcciones
- Combine all ingredients on large sheet of foil (shiny side down) and mix by hand to ensure all vegetables are coated.
- Lay same size foil flat on top (shiny side up) and fold each edge up to create a flat envelope with all edges sealed. Don't pierce foil.
- Heat grill to medium-high heat and place in closed barbecue for 20 to 30 min, turning twice during which time.
