Receta Caramelized Onion Sweet Potato Salad

Ingredientes
- 2 Tbsp. Extra virgin olive oil
- 3 x Red onions peeled, halved, and thinly sliced
- 1 Tbsp. Dijon mustard
- 1/4 c. Balsamic vinegar
- 1 tsp Honey
- 1 Tbsp. Finely-minced orange zest
- 1 Tbsp. Finely-minced fresh thyme
- 3 x Sweet potatoes sliced 1/2" thick Vegetable oil Salt to taste Freshly-grnd black pepper to taste
Direcciones
- Heat oil in a heavy skillet over medium heat. Cook onions slowly till golden. Add in mustard and vinegar and cook another 2 min. Remove from heat and add in honey, orange zest and thyme, stir to combine. Let cold.
- Preheat grill.
- Brush the potato slices on both sides with the vegetable oil and season with salt and pepper. Grill the potatoes on each side for 3 to 4 min or possibly till just cooked through. Place potatoes in a bowl and mix in onion mix.
- This recipe yields 4 servings.
