Receta Caribbean Rice Bowl
A Spicy combo of Chicken, Shrimp, mango, tomato and coconut Served over a bed of Rice.
Sold them at work.
This is a recipe made per order so if you want to serve more then one person you'll need to double it
though it is alot of it and it is very filling
Ingredientes
- 5 jumbo Shrimp - peeled and devined
- 5 oz Chicken breast - medium dice
- 1/4 cup Red Pepper - medium dice
- 1/8 cup Garlic Butter
- 1/4 cup Green pepper - medium dice
- 1/4 Cup Mango- large Dice
- 1/2 Lime
- salt and pepper to taste
- 1/4 cup Salsa - any heat
- 1/4 cup Cream
- 3 tbsp Coconut
- 1/2 tsp Chili flakes
- 1/2 Cup rice pilaf - already cooked
Direcciones
- Preheat a pan on medium. Add the garlic butter, Chicken Breast and Shrimp.
- When the shrimp is half way done, Add the red and green peppers.
- next add the mango and the salt and pepper.
- When the chicken and Shrimp is full Cooked, Next add your remaining ingredients including the Rice.
- Bring to a simmer til it starts to thicken a bit.
- Serve and enjoy.
