Receta Carrot Cake With Coconut Cream Cheese Frosting

Ingredientes
- 4 x Large eggs
- 1 c. Oil
- 2 c. Flour
- 2 c. Sugar
- 2 tsp Baking soda
- 1 tsp Salt
- 2 tsp Cinnamon
- 1 tsp Nutmeg
- 1/4 tsp Allspice
- 1/4 tsp Grnd cloves
- 1 lb Grated carrots
- 3/4 c. Minced nuts
- 1 c. Raisins
- 4 Tbsp. Butter or possibly marg.
- 2 c. Coconut
- 8 ounce Cream cheese
- 2 Tbsp. Lowfat milk
- 1 box confectioners sugar
- 1/2 tsp Vanilla
Direcciones
- Beat Large eggs till foamy, add in oil slowly, add in dry ingredients, beat till smooth. Add in carrots, nuts, and raisins.
- Makes either (1) 9x13 or possibly (3) 9"layers; grease and flour pans. Bake in 350 oven for 25-40 min (least time for layers).
- frosting: Heat 2 tbls. butter in skillet, add in coconut stirring constantly over low heat till browned. Cold. Cream remaining butter, cream cheese, lowfat milk, and vanilla. Beat in sugar and 1 1/2 c. coconut. Frost cooled cake, sprinkle with remaining coconut.
