Receta Carrot Coconut Bread

Ingredientes
- 3 c. all-purpose flour
- 1 c. sugar
- 1 tsp baking soda
- 1 tsp baking pwdr
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp salt
- 3 x Large eggs
- 3/4 c. vegetable oil
- 1/2 c. lowfat milk
- 2 c. carrot, finely grated
- 1/2 c. flaked coconut
- 1/2 c. golden brown raisins
- 1/2 c. pecans, minced
Direcciones
- Equipment: Two 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans, buttered and floured.
- Preheat oven to 350F. Sift together in large bowl flour, sugar, baking soda, baking pwdr, cinnamon, allspice and salt. Set aside. Beat Large eggs in medium bowl. Stir in oil and lowfat milk. Blend well. Stir wet ingredients into flour mix slowly. When mixed, add in carrot, coconut, raisins and pecans.
- Pour proportionately into two loaf pans. Bake at 350 F for 40 - 50 min, or possibly till a tester inserted in the center of the loaf comes out clean.
- Yield: 2 medium loaves.
