  • 1- 2 lb. head of cabbage, cut into florets, or you could use frozen florets.
  • 1 T olive oil
  • 1 onion, minced
  • 1/2 tsp ground coriander
  • 1/2 tsp crushed red pepper flake, or more or less to taste
  • 3/4 tsp salt, divided into 1/2 tsp and 1/4 tsp
  • 3/4 c all purpose flour
  • 1/4 c whole wheat flour
  • 1/2 tsp baking powder
  • 6 eggs
  • 1 roasted red pepper (either canned for fresh), chopped
  • 3/4 c feta
  • 3 T fresh dill

Direcciones

  1. Preheat oven to 350 and line a springform pan with parchment or spray lightly.
  2. Steam or microwave the cauliflower florets until tender.
  3. In a large skillet, heat the oil over medium heat and cook the onion until golden and tender.
  4. Add the coriander, red pepper, 1/2 tsp salt and cook until fragrant.
  5. Gently stir in the cauliflower and cook another minute to let the flavors combine.
  6. Whisk together the flours, baking powder and remaining salt.
  7. Whisk together the eggs and sprinkle the drys over top. Stir to ensure no lumps form.
  8. Stir in the red pepper, feta, 2 T dill and the cauliflower mixture.
  9. Pour into the prepared pan and bake until the cake is set, about 35-45 minutes.
  10. Remove once cool and top with the remaining dill.

    A unique way with cauliflower. I prepared a half batch to try it out. Not having a smaller spring-form pan, I baked it in a buttered 1 quart casserole as a “veggie side” rather than a “cake”! Very good.
