Receta Cauliflower Cake
This is such a great way to eat your veggies. It would be so easy to change to suit your tastes too!

Ingredientes
- 1- 2 lb. head of cabbage, cut into florets, or you could use frozen florets.
- 1 T olive oil
- 1 onion, minced
- 1/2 tsp ground coriander
- 1/2 tsp crushed red pepper flake, or more or less to taste
- 3/4 tsp salt, divided into 1/2 tsp and 1/4 tsp
- 3/4 c all purpose flour
- 1/4 c whole wheat flour
- 1/2 tsp baking powder
- 6 eggs
- 1 roasted red pepper (either canned for fresh), chopped
- 3/4 c feta
- 3 T fresh dill
Direcciones
- Preheat oven to 350 and line a springform pan with parchment or spray lightly.
- Steam or microwave the cauliflower florets until tender.
- In a large skillet, heat the oil over medium heat and cook the onion until golden and tender.
- Add the coriander, red pepper, 1/2 tsp salt and cook until fragrant.
- Gently stir in the cauliflower and cook another minute to let the flavors combine.
- Whisk together the flours, baking powder and remaining salt.
- Whisk together the eggs and sprinkle the drys over top. Stir to ensure no lumps form.
- Stir in the red pepper, feta, 2 T dill and the cauliflower mixture.
- Pour into the prepared pan and bake until the cake is set, about 35-45 minutes.
- Remove once cool and top with the remaining dill.
