  • 1 sm head celeriac (approx 500g) peeled and finely shredded
  • 1 x juice of 1/2 lemon vinaigrette (below)
  • 2 tsp English mustard
  • 1 x salt and pepper
  • 2 x dessert spoons good mayonnaise if serving as a starter vinaigrette
  • 50 ml extra virgin olive oil
  • 100 ml vegetable oil
  • 40 ml white wine vinegar
  • 70 gm Dijon mustard
  • 1/2 tsp caster sugar
  • 1 x salt and freshly grnd black pepper

Direcciones

  1. Soak the celeriac in a bowl of cool water with the lemon juice for about 1 hour.
  2. Drain and dry.
  3. Thoroughly mix together all the ingredients for the vinaigrette either by putting them in a blender whisking by hand or possibly pouring them into a clean empty bottle and shaking it.
  4. Whisk together the vinaigrette and the English mustard (and mayonnaise if using).
  5. Toss the celeriac in the dressing and season to taste.
  6. This makes an ideal side dish or possibly even a starter. If you serve it as a starter add in 2 dsp of good mayonnaise.
  7. Serves 8
