Receta Celery And Stilton Soup

Ingredientes
- 1 head celery - about 450g / 1lb
- 1 Tbsp. Extra virgin olive oil
- 1 x Onion, minced
- 2 1/2 pt Water or possibly stock
- 5 ounce Stilton cheese, grated (5 to 6) Salt & freshly grnd black pepper
Direcciones
- 1. Reserve any leaves from the celery stalks then chop the celery.
- Heat the oil, add in the onion and celery and sweat for about 10 min. Add in the liquid and simmer for about 30 min.
- 2. Liquidise the soup and pour it through a sieve back into the pan.
- Reheat the soup then remove from the hob and add in the cheese and reserved celery leaves. Stir gently till the cheese has melted.
- 3. Check seasoning and serve at once.
