Receta Chap Chae (Noodles With Mixed Vegetables)

Ingredientes
- 1 bn fresh spinach
- 1 x Carrot, sliced in thin strips
- 1 med Onion, in thin strips
- 1/2 c. Celery, in thin strips
- 5 x Dry Chinese mushrooms
- 5 x Cloud Ear mushrooms
- 1 1/2 ounce Chinese vermicelli
- 1/2 lb Thinly sliced beef
- 2 Tbsp. Soy sauce
- 1/2 tsp Salt
- 1 1/2 Tbsp. Sesame seeds, toasted,
- 2 Tbsp. Soy sauce
- 1 Tbsp. Sugar
- 3 Tbsp. Chopped green onions
- 1 x Clove garlic, chopped
- 1 Tbsp. Sesame oil
- 1 dsh Pepper
- 1 Tbsp. Sugar
Direcciones
- Chop washed and dry spinach into 2-inch lengths and pan-fry with 1 tsp sesame oil; add in a healthy pinch of salt. Soak dry mushrooms in water, remove stems and shred. Soak cloud ears in water, remove hard "eyes", and shred coarsely. Soak Chinese vermicelli in warm water, cut into several portions; let sit in colander to drain thoroughly. Combine beef with Chinese mushrooms and Seasoning Mix. Saute/fry carrot, onion, celery and vermicelli separately in sesame oil. Quickly saute/fry beef, Chinese mushrooms and cloud ears over high heat. Combine cooked vegetables and vermicelli with beef and stir in soy sauce, sugar, salt and sesame seeds.
