Receta Cheesy Enchiladas

Ingredientes
- 2 c. Cheese, Cottage
- 1 c. grated Cheese, Monterey Jack
- 1 can minced Chilies
- 1 x beaten Egg
- 1 tsp Chili pwdr
- 1/2 tsp Salt
- 1/2 tsp Paprika
- 10 x Tortillas
- 1 can Enchilada sauce
- 2 c. grated Cheese, Cheddar Lowfat sour cream Minced Onion, Green
Direcciones
- 1. Mix together cottage cheese, jack cheese, minced chilis, egg and seasonings.
- 2. Microwave tortillas on high for 30-45 seconds. Place 1/3 c. filling on each tortilla. Roll up jellyroll fashion.
- 3. Place tortillas, seam side down, in a baking dish. Cover with enchilada sauce.
- 4. Sprinkle with cheddar cheese. Microwave on high for an additional 1-2 min.
- 5. Garnish with lowfat sour cream and green onions.
- Yeilds 4-6 servings.
- ** If you like may also add in refried beans to filling.
