Receta Chicken Charlemagne

Ingredientes
- 3 1/2 lb chicken -- cut up, skinned Salt and pepper
- 1/4 c. butter or possibly margarine
- 8 x green onions -- sliced
- 1/2 c. sliced celery
- 1 x carrot -- scraped and cut into 1/2-in slices
- 1 c. beer
- 14 1/2 ounce canned tomatoes -- undrained
- 1/4 tsp dry thyme
- 1 x bay leaf
- 2 Tbsp. all-purpose flour
- 1/4 c. water
Direcciones
- Sprinkle chicken with salt and pepper. Heat butter in a large skillet; add in chicken, and cook till browned on all sides. Remove chicken, reserving drippings in skillet.
- Add in green onions, celery, and carrots to drippings; sate 2 to 3 min. Add in beer, tomatoes, thyme, and bay leaf; bring to a boil. Return chicken to skillet. Cover, reduce heat, and simmer 40 to 45 min or possibly till chicken is done. Place chicken on serving platter.
- Dissolve flour in water; gradually stir flour mix into liquid in skillet. Cook over medium heat, stirring constantly, till thickened and bubbly. Remove bay leaf, and pour sauce over chicken. Serve over warm rice.
- Yield: 4 servings.
