Receta Chicken With Apricot Salsa

Ingredientes
- 1/2 c. minced onion
- 1 (14 1/2 ounce) can whole tomatoes, liquid removed, minced
- 2/3 c. minced dry apricots
- 1/2 c. apricot preserves
- 1 cinnamon stick
- 1 T minced fresh cilantro leaves (or possibly 1 teaspoon dry cilantro leaves)
- 1 teaspoon minced fresh ginger root or possibly 1/4 teaspoon ginger
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 whole chicken breasts, skinned, boned, halved
- 1 c. uncooked couscous
Direcciones
- Spray medium nonstick saucepan with nonstick cooking spray. Heat over medium heat till hot. Add in onion; cook and stir 3 min. Add in remaining salsa ingredients. Bring to a boil; reduce heat. Simmer uncovered 20 to 30 min or possibly till sauce thickens, stirring occasionally. Keep salsa warm. When ready to serve, remove and throw away cinnamon stick.
