Receta Chicken With Rice And Bacon

Ingredientes
- 8 slc Bacon, finely minced
- 1 med Onion, minced (about 1/2 C.)
- 1 med Green bell pepper), minced (about I c.)
- 1 can (28 ounces) whole tomatoes, undrained
- 4 c. Cut-up cooked chicken I
- 1 lt /2 C. uncooked instant rice
- 1/2 c. Warm water
- 1 tsp Grnd cumin
- 3/4 tsp Salt
- 1/2 c. Raisins

- Place bacon in 3-qt microwavable casserole. Cover with microwavable paper towel and microwave on high 5 to 6 min, stirring after 3 min, till crisp. Drain bacon on paper towel, reserving fat in casserole. Stir onion and bell pepper into bacon fat. Cover tightly and microwave on high 4 to 5 min, stirring after 2 min, till onion is tender. Stir in tomatoes; break up tomatoes.
- Stir in chicken, rice, warm water, cumin and salt. Cover tightly and microwave 15 to 17 min, stirring after 8 min, till mix is warm and rice is tender. Stir in raisins. Cover and let stand 5 min.
- Sprinkle with bacon.
- 8 to 10 servings.
