Receta Chicken Zucchini Creole Style

Ingredientes
- 2 (3 lb.) fryers, cut up
- 5 tbsp. butter
- 1 c. minced onion
- 1/2 c. minced green pepper
- 1 clove garlic, chopped
- 1/3 c. flour
- 1 1/4 teaspoon salt
- 1/2 teaspoon basil leaves
- 1/4 teaspoon oregano leaves
- 1/4 teaspoon pepper
- 1 (13 3/4 ounce.) can chicken broth
- 1 (1 pound 12 ounce.) can Italian tomatoes
- 1 pound zucchini (3 med., sliced)
- 2 tbsp. parsley
Direcciones
- Brown chicken in butter. Remove from pan and saute/fry onion, green pepper and garlic in drippings. Don't brown. Stir in flour and spices. Cook 1 minute. Gradually stir in chicken broth. Drain and cut up the tomatoes and add in with chicken broth. Bring to a boil. Add in chicken. Cover and simmer 20 min. Add in zucchini, cover and simmer additional 20 min or possibly till tender. Garnish with parsley. Makes 8 servings.
