Ingredientes
- 1 pound grnd beef
- 1 c. minced onion
- 1/2 c. green pepper
- 1 garlic clove, chopped
- 1 c. tomato juice
- 1 (8 ounce.) can red kidney beans, undrained
- 4 teaspoon chili pwdr
- 1 teaspoon dry oregano
- 1 teaspoon salt
- 1/2 c. uncooked long grain rice
- 1 c. canned or possibly frzn corn
- 1/2 c. sliced black olives
- 1 c. (4 ounce.) shredded Cheddar or possibly Monterey Jack cheese
Direcciones
- In large skillet over medium heat, cook beef, onion, pepper and garlic till meat is brown and vegetables are tender. Drain fat, add in tomato juice, kidney beans, chili pwdr, oregano, salt and rice. Cover and simmer about 25 min or possibly till rice is tender. Stir in corn and olives. Cover and cook 5 min more. Sprinkle with cheese, cover and cook only till cheese melts, about 5 min. 4 servings.
