  • Pancake Recipe: Chinese Pancakes
  • Chinese pancakes are great when made with shreds of cooked chicken or duck. There are a whole range of ingredients you can add but a good suggestion would be to include diced cucumber, spring onion and some hoisin sauce.

  • 8 oz flour
  • 7 oz boiling water.
  • (makes 20 pancakes and takes roughly 20 mins to make)

  1. To make chinese pancakes simply add roughly 6 oz of boiling water to 8 oz of flour whilst constantly stirring. After a few minutes the mix will be cool enough to kneed. Roll the dough well for approximately 5 minutes and then allow to stand for half an hour.
  2. Take the dough and split into 10 pieces.
  3. Divide the slice into two parts and roll out onto a lightly floured board. Then brush the dough with sesame oil and make a sandwhich with the two parts with the oiled side in the middle.
  4. Then roll these two pieces together until they are 6 inches in diameter and re cover until later. These two pancakes will be seperated from one another when cooked.
  5. Cook the rolled out pair over a low heat until they start to go golden, then seperate the two pancakes and put them on a plate covered with another plate to prevent them from drying out
  6. Once this has been done with all the pancakes (you should have twenty), re-heat them in a oven on a low to medium heat for approximately 5 minutes
