- 1/3 c. chipotle peppers in adobo sauce, seeded and minced
- 2 c. all-purpose flour, (2-2 1/4 c.)
- 3 x extra-large Large eggs

- Put the chipotles, 2 c. of the flour, and salt in the work bowl of a food processor which has been fitted with the steel blade and process for 30 seconds to combine. Add in the Large eggs and process till a ball of dough is formed. Add in additional flour as needed if the dough is sticky.
- Remove the dough from the processor and cut by hand or possibly with a pasta machine to the desired shape.
- Makes 18 ounces of pasta, or possibly sufficient, when cut, to serve 4-6 as a main course.
