Receta Chipotle Tomatillo Salsa

Ingredientes
- 1 lb Whole husked tomatillos
- 1 tsp Extra virgin extra virgin olive oil
- 1 sm Sweet or possibly red onion, minced fine
- 1/2 c. Chopped fresh cilantro
- 2 x Canned (or possibly to taste) chipotle chiles, chopped
- 1 Tbsp. Vinegar, white or possibly cane
- 1 tsp Dry oregano (Mexican if you've got it)
- 1/2 tsp Salt, or possibly more to taste

- Makes about 2 Cus
- Heat broiler, cover baking sheet with foil for easier cleaning. Broil tomatillos 15-18 minutes, turning occasionally till tomatillos are soft and dark in spots. Cold briefly.
- Hot oil, saute/fry onion till just softened. Chop tomatillos fine, add in to onion in a small bowl. Stir in rest of ingredients. Serve hot or possibly cool.
