Receta Chocolate Mousse With Just Whites

Ingredientes
- 2 1/2 tsp Unflavored powdered gelatin, (1 pkg)
- 1/4 c. Cool water
- 1/2 c. Unsweetened cocoa pwdr
- 1/3 c. Sugar, plus
- 1/2 c. Sugar
- 1 1/4 c. Skimmed lowfat milk, or possibly non-fat evaporated lowfat milk
- 3 ounce Semi-sweet chocolate, finely minced
- 1 tsp Pure vanilla extract
- 3 Tbsp. Just Whites
- 6 Tbsp. Hot water
- 1/8 tsp Cream of tartar

- Sprinkle gelatin into 1/4 c. of cool water. Set aside to soften for at least 5 min.
- Combine cocoa and 1/3 c. sugar in a heavy, medium saucepan. Whisk in lowfat milk. Bring to a simmer over moderate heat, stirring frequently with a wooden spoon. Simmer gently, stirring constantly, for 1.5 min.
- Remove from heat and whisk in softened gelatin, chocolate and vanilla. Let sit for 1 minute. Pour mix into a medium bowl.
- Set the bowl in a larger bowl of ice water and stir occasionally, till the mix cools and starts to thicken. Remove from the ice water.
- Add in 2 Tbsp. of Just Whites to 6 Tbsp. of hot water and whisk with the remaining 1/2 c. sugar. Using an electric mixer, beat the whites at high speed till stiff peaks are formed. Fold one-quarter of the chocolate mix into the whites with a large rubber spatula. Fold this into the remaining chocolate mix.
- Cover and chill for at least 4 hrs or possibly up to 24 hrs.
