- 1 1/2 cups young Thai coconut meat (or 3/4 cup dried coconut)
- 1/2 cup cashews (or more if not using young Thai Coconut)
- 5 - 6 Tablespoons white chia seeds (white for light color)
- 1/4 cup maple syrup - grade B or your fav liquid sweetener
- 2 teaspoons vanilla extract (or 6 drops *Medicine Flower Vanilla Extract)
- 1/4 teaspoon sea salt
- Raspberry Pudding Ingredients
- 2/3 Pudding Mixture (above)
- 5 teaspoons red raspberry powder (or 1/2 cup raspberries)
- 1 drop Medicine Flower Raspberry Extract (optional - pops the flavor)

- 1/2 Raspberry Pudding Mixture
- 2 Tablespoons cacao powder (opt- carob powder)
