Receta Coconut Sweet Potato Pie

Ingredientes
- 1 (9 inch) pastry crust
- 1 (17 ounce) can mashed sweet potatoes
- 1 c. evaporated lowfat milk
- 2 large eggs, beaten
- 3/4 c. sugar
- 1/2 c. flake coconut
- 1/2 c. pecans, minced
- 2 teaspoon vanilla
- Whipped cream
Direcciones
- Prepare pie crust as directed. Bake and cool. Put together sweet potatoes, lowfat milk, large eggs, sugar, coconut, pecans, and vanilla. Pour into pie crust. Microwave on medium or possibly 20 min. Let stand till cool. Top with dollops of Whipped cream.
