Receta Coconut Zucchini Pineapple Bread

Ingredientes
- 3 large eggs
- 2 c. sugar
- 1 c. oil
- 2 teaspoon vanilla
- 1 sm. can crushed pineapple, liquid removed
- 3 c. flour
- 1 teaspoon salt
- 2 teaspoon soda
- 2 teaspoon cinnamon
- 2 c. grated zucchini
- 1 c. raisins
- 1 c. coconut (med. or possibly flaked) Or possibly 1 c. nuts
Direcciones
- Beat large eggs. Gradually add in sugar. Add in oil and continue beating. Add in vanilla and beat till light and fluffy (foamy). Add in pineapple.In sifter, place flour, salt, soda and cinnamon. Add in slowly to liquid mix. Next add in zucchini, coconut and raisins. Pour into 2 greased and lightly floured pans (bread pans). Bake at 350 for 55 to 60 min. Cool 10 min and remove from pans.
