Receta Colonial Peanut Soup

Ingredientes
- 2 Tbsp. butter
- 2 Tbsp. grated onion
- 1 stalk celery, thinly sliced
- 2 Tbsp. all purpose flour
- 3 c. chicken broth
- 1/2 c. creamy peanut butter
- 1/4 tsp salt
- 2 Tbsp. lemon juice
- 2 Tbsp. minced roasted peanuts
Direcciones
- Heat butter in a saucepan over low heat; add in onion and celery. Saute/fry for about 5 min. Add in flour and mix till well blended. Stir in chicken broth and allow to simmer for about 30 min. Remove from heat, strain broth. Stir the peanut butter, salt and lemon juice into the strained broth till well mixed. Serve warm in c.. Garnish each c. with a tsp. of minced peanuts.
