- 1 x Beef fillets, 1 to 1 1/2 inches thick clarified butter salt and pepper

- Heat butter in heavy warm skillet. Quickly brown steaks on both sides. Remove from skillet and place in shallow pan (don't crowd they shouldn't touch). Let stand at room temperature. When ready to cook, bake at 325 degrees for 15 to 18 min for medium-rare, 18-22 min for medium. Season with salt and pepper.
