Receta Corn Bread Muffins

Ingredientes
- 1 1/2 c. Flour
- 4 1/2 tsp Baking pwdr
- 1/3 tsp Salt
- 1 1/2 c. Fine yellow corn meal
- 2 x Large eggs, beaten
- 1/4 c. Honey (scant)
- 1 1/2 c. Plain soy lowfat milk
- 8 Tbsp. Pareve margarine, melted

- Preheat oven to 375 . Mix together flour, baking pwdr, & salt in a large bowl, and add in cornmeal. In another bowl, mix Large eggs, honey, lowfat milk & margarine.
- Combine flour & egg mixtures, and beat till smooth, but do not overmix.
- Bake in a well-greased muffin tin for 20-25 min.
- Variation: for a sweeter muffin, increase honey to 1/2 c..
