Receta Corn Cilantro Rice
This rice dish is a little sweet from the corn and a little tangy from the cilantro. It goes great with your favorite tacos or even something like tuna burgers.
Ingredientes
- 1 tablespoon butter
- 1 (12 ounce) can corn (reserve juice!)
- 1 cup rice
- 1/2 teaspoon chili powder
- 1 cup water
- 1 cup chopped cilantro
- 1 tablespoon butter
- 1/2 teaspoon salt
Direcciones
- Melt butter in saucepan over low/medium heat. Add corn, rice and chili powder. Cook and stir for about 4 minutes.
- Add the reserved corn juice to a 1 cup measuring cup and add enough water to bring it to 1 cup. Add the corn juice/water mix and the other cup of water to the rice.
- Bring to a boil then turn heat to low, cover and simmer for 15 minutes or until all water is absorbed.
- Add butter, cilantro and salt, stir until combined.
