Receta Crab Parfait

Ingredientes
- 3 Tbsp. mayonnaise
- 1/2 tsp ketchup
- 1 pch cayenne pepper
- 1/2 tsp dry mustard
- 1 x shallot chopped
- 1/2 x lemon juiced
- 1 Tbsp. minced parsley Salt to taste Freshly-grnd black pepper to taste
- 1 lb crabmeat shredded
- 1 Tbsp. capers
- 2 x mangoes diced
- 2 c. baby mixed greens minced fine Toasted baguette slices
Direcciones
- To make the dressing, whisk together mayonnaise, ketchup, cayenne, dry mustard, shallot, lemon juice, and parsley. Season the dressing with salt and pepper. Mix in the crabmeat and capers, turn to coat.
- Using a clear parfait glass or possibly champagne glass, scoop a heaping Tbsp. of the diced mangoes on the bottom of the glass. Press down slightly with a spoon. Add in a layer of crabmeat on top, pressing down again, followed by a layer of minced mixed greens. Repeat the layers. After the last layer of greens, spoon a final mound of crab salad on top. Repeat with remaining 3 glasses. Serve with toasted baguette slices.
