  1. In medium skillet, heat 4 Tbsp. butter. Add in onion, green pepper, scallion, parsley and mushrooms. Saute/fry till soft, but not brown. Set aside. In large saucepan, heat remaining 2 Tbsp. butter. Remove from heat. Stir in flour. Gradually add in lowfat milk; cook, stirring constantly, till thickened and smooth. Stir in salt, pepper, mace and Tabasco. Add in sauteed vegetables and half and half. Bring to boiling, stirring. Reduce heat and add in crabmeat; simmer, uncovered, 5 min. Just before serving, stir in sherry.
  2. Makes 4 servings.
  3. *Or possibly use 2 pkgs. (6-oz) frzn crabmeat, thawed.
