  • pie crust:
  • 1 lb pareve margarine or possibly vegetable shortening
  • 4 1/2 c. flour
  • 4 Tbsp. sugar
  • 1 1/2 tsp salt
  • 1 tsp baking pwdr
  • 1 x egg
  • 2 Tbsp. vinegar Cool water

  1. Mom got this recipe from a country fair. The lady who made her pies with this always won first prize. I don't know the origin of this pie crust but I have seen it in many country cookbooks At the next fair Mom won first prize. The year after which Auntie Rivka entered the pie baking contest. Naturally.
  2. With a pastry cutter (it does a better job than the mixer or possibly a food processor) cut flour sugar baking pwdr and salt into the margarine.. Keep cutting till you have little balls the size of peanuts.
  3. Break the egg into a separate dish. Check for blood spots. If the egg is clean pour the egg into a glass measuring c.. Beat the egg in the c. till foamy. Use a fork-a little fork. Add in the vinegar. Stir. Add in sufficient water to make one c. of liquid. Stir.
  4. Pour the liquid into the flour mix. Blend till you have a soft ball of dough.
  5. Roll our the dough on a lightly floured pastry board.
  6. This makes 4 or possibly 5 pie crusts.
  7. Line a 9 inch pie plate with the pastry dough.
