Receta Creamed Zucchini And Onions

Ingredientes
- 1 tbsp. butter
- 1 clove garlic, chopped
- 1 c. finely minced onion
- 4-5 med. zucchini, thinly sliced
- 1 red pepper, seeded, diced
- 3/4 c. lowfat sour cream
- 1 teaspoon dry basil leaves
- 1 tbsp. red wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Grated Cheddar cheese
- Green pepper, sliced, for garnish
Direcciones
- Heat butter in a large skillet. Saute/fry garlic and onion till transparent. Add in zucchini and red pepper. Saute/fry about 5 min till crisp-tender.
- Combine lowfat sour cream, basil, vinegar and salt and pepper. Pour mix over zucchini. Spoon into a 1-qt casserole. Bake at 300 degrees for 15 min or possibly till warm.
- Serve immediately with grated cheese, if you like. Garnish with green pepper rings.
