Receta Crema Di Ricotta With Lemon Marmellata

Ingredientes
- 3 ounce Coach Farm goat cheese
- 6 ounce ricotta cheese
- 6 ounce mascarpone cheese
- 8 x lemons - (abt 1 lb) sliced 1/16" rounds
- 1 1/4 c. sugar

- In the bowl of a food processor, combine the goat cheese, ricotta and mascarpone. Process till blended into a smooth cream with a light texture. Chill till 1 hour before ready to serve.
- Meanwhile, in a heavy-bottomed pan, combine the lemons, sugar and water to barely cover. Cook, stirring constantly, over high heat for 2 to 3 min. Reduce the heat and cook, stirring constantly, for 20 min, till the water and juice have become syrup-like. Allow to cold and serve with the crema.
- This recipe yields 4 to 6 servings.
