  1. Cut fish into 4 portions; pat dry and brush with veg. oil. In a shallow baking dish, stir together bread crumbs, Parmesan cheese, tarragon, paprika, and pepper. Dip fish into crumb mix to coat both sides. Arrange pcs in a 12 x 7 1/2 x 2 inch baking dish. Sprinkle leftover bread crumb mix on top. Bake, uncovered, in a 450 degree oven for 8 to 12 min or possibly till fish flakes easily when tested with a fork.
