Receta Crunchy Potato Latkes

Ingredientes
- 6 med. potatoes
- 2 Large eggs
- 2 tbsp. matza meal
- 1 teaspoon salt
- 1 tbsp. lemon juice
- 1 med. grated onion
- 1/4 teaspoon baking pwdr
- Pepper to taste
Direcciones
- Grate potatoes and drain. Marinate with lemon juice. Add in remaining ingredients and mix well. Drop by Tbsp. into 1/4" deep warm oil. Fry till brown on both sides, turning only once so which pancakes don't get soggy. May be frzn. If reheated in oven they will be crispy, microwave and they will be soft.
