  • 4 x Red Snapper Fillets
  • 3 slc Bread Day Old, (1-2C)
  • 2 x Cloves Garlic Chopped Green Onion Tops Or possibly Fresh Parsley, Thyme Or possibly Chives
  • 1 tsp Extra virgin olive oil *Note
  • 1 Tbsp. Icbinb-Light *Note

  1. *NOTE: Heat the lowfat margarine and mix the extra virgin olive oil with it. (He originally used butter)(The original recipe also called for 1 Tablespoons extra virgin olive oil..I cut it back)
  2. Sprinkle a bit of salt over the tops of the red snapper fillets. Place them on a foil covered broiler pan.
  3. Make bread crumbs in the food processor using 3 slices of day old bread.
  4. Put in a bowl.
  5. Add in the chopped garlic, and the melted margarine and extra virgin olive oil into the bread crumbs so which the crumbs are moistened.
  6. Pat part of the mix on each fillet. Place 4 - 5 " from the broiler and broil 2 minutes. Remove and gently turn the fillets over. Pat the rest of themixture on the second side. Broil for an additional 2 minutes.
  7. Remove and plate.
  8. This was absolutely wonderful. I did have to cook it quite a bit longer then his directions said but you definitely have to watch it or possibly it will burn on you.
