  • 5 large eggs
  • 1/2 cup milk
  • 1/2 cup diced ham
  • 2 medium mushrooms
  • 1 small onion
  • 2 tsp chopped garlic
  • 2 Tbsp shredded Mozzarella cheese
  • Butter-flavor cooking spray

Direcciones

  1. 1. Spray the wells of a miniature muffin pay with the cooking spray; set aside.
  2. 2. Heat a non-stick frying pan over medium heat. Spray a small amount of cooking spray into the pan. Finely chop the onion and saute until softened. Chop the mushrooms and add them to the onions. Once the mushrooms have wilted, add the garlic and continue sauteing for a minute or two more. Set off the burner to cool for a couple of minutes.
  3. 3. Break the eggs into a bowl and beat with a fork. Add the remaining ingredients to the bowl (make sure the onion mixture is cooled enough that it won't cook the eggs). Stir until well mixed.
  4. 4. Use a small ice-cream scoop to spoon the egg mixture into the muffin tin. Bake for 8 minutes at 350 degrees. Let stand for a couple of minutes before removing them from the pan to make sure each quiche is thoroughly set.

    I made a variation of these on Christmas using pre-made pie crust (cut out small circles with a glass and press them into the wells of a mini-muffin tin), cooked-crumbled sausage, and cheddar cheese (left out the onion, garlic and mushrooms altogether). I think I like the sausage even better than the ham in these. I have also found that if you use a mixer (such as a magic bullet) to mix the egg/milk mixture together it doesn't separate as quickly and is easier to pour into the mini-muffin wells.
