Receta Crystal Ginger Sweet Potatoes

Ingredientes
- 6 med. sweet potatoes, peeled
- Lightly salted water
- 3 T lightly salted butter
- 1/4 c. crystallized ginger, cut in sm. pcs
- 1/4 c. brown sugar
- 1/2 c. orange juice
Direcciones
- Cover sweet potatoes with lightly salted water. Cover pan; bring to a boil and cook about 20 min till tender.Butter a 1a 1/2-quart casserole. Heat oven to 375 degrees. Slice potatoes 1/4-inch thick. Arrange a layer of potatoes in the casserole. Dot with 1 tbsp butter, cut in pcs. Sprinkle with some ginger. Repeat to create 2 more layers. Sprinkle top with brown sugar and pour orange juice over it. Bake about 45 min. Makes 6-8 servings.
