Receta Cuban Black Beans And Rice

Ingredientes
- 2 c. dry black beans
- 2 tbsp. oil
- 3 tbsp. butter
- 1 minced onion
- 2 cloves garlic, minced
- 1 c. rice
- 6 c. water
- Healthy pinch of salt and pepper
Direcciones
- Put beans in pressure cooker with 4 c. water and oil. Close and cook till control jiggles. Remove from heat, cold naturally, drain beans and set aside.
- Cook onion in butter till translucent/soft, add in garlic and rice. Stir and cook for 5 min. Add in 2 c. water and beans. Cover and cook on high till control jiggles, then lower heat and cook five min. Remove from heat, let sit 5 min, then run under cool water. Season to taste. Serves 4. May be doubled in a 6-8 qt cooker.
