Receta Cucumber Avocado Watercress Soup

Ingredientes
- 2 bunches watercress
- 2 large ripe avocados, peeled and sliced
- 6 cucumbers, peeled and sliced
- 1/2 small red pepper (seeded and cut up)
- 1/2 small green pepper (seeded and cut up
- 1 tbsp. parsley, minced
- 2 tbsp. parsley, minced
- 1 c. lowfat sour cream
- Chicken broth
- Salt
- Freshly grnd pepper
- Sliced red radishes, garnish
Direcciones
- Rinse and trim watercress. Combine first 8 ingredients in a food processor with the steel blade in place. Process till pureed. Add in chicken broth if necessary to thin soup. Season with salt and pepper. Transfer to bowl and refrigeratewell. Garnish with sliced red radishes. Serves 6.
