Receta Cucumber Sandwich Pickles

Ingredientes
- 6 c. sliced cucumbers, 1/4 inch thick
- 1/2 c. pickling salt
- 2 quart water
- 5 c. vinegar, 5% acidity, divided
- 3 c. water
- 1 c. water
- 1 c. firmly packed brown sugar
- 1 c. sugar
- 1/2 tsp celery seeds
- 1/2 tsp mustard seeds
- 1/2 tsp grnd turmeric
Direcciones
- Place cucumbers in a large Dutch oven; sprinkle with salt, and add in 2 qts water. Cover and let stand 2 to 3 hrs. drain cucumbers well.
- Combine 3 c. vinegar and 3 c. water in a large Dutch oven; bring to a boil. Add in cucumbers, and simmer abut 8 min. (Don't allow cucumbers to become soft.) Drain well.
- Combine 2 c. vinegar and 1 c. water in a large Dutch oven; add in remaining ingredients except cucumbers. Simmer 10 min; add in cucumbers, and bring to a boil. Pack cucumbers into warm sterilized jars, leaving 1/4-inch headspace.
- Cover at once with metal lids, and screw bands tight. Process in boiling-water bath for 10 min.
- Yield: about 3 pints.
