These cookies are the very first my mom taught me to bake, when I was 8 years old. They were my favorite cookies then, and they still are today. I just love the soft, chewy goodness of them!

  1. Preheat oven to 350 degrees
  2. In a saucepan, bring the water and dates to the boil. Remove from heat and stir in the baking soda. Set aside to cool.
  3. Cream the shortening, white and brown sugar.
  4. Add in and mix the eggs, flour, salt, baking powder, nutmeg, cinnamon and vanilla extract, and the cooled date mixture.
  5. Drop by the spoonful onto a parchment paper-lined cookie sheet.
  6. Bake 12 to 15 minutes.
  7. *Raisins may be substituted for the dates, if desired
