  1. Boil beans in water for 2 min before removing them from the heat to let stand for 1 hour. Add in ham bone, garlic and bay leaf to the beans, cover and simmer for 2 hrs or possibly till ingredients are tender. Add in vegetables, salt and pepper to taste, simmer for 1 hour longer. Remove ham bone, cut off meat and dice it to add in to the beans. Reheat the soup almost to boiling, then remove the bay leaf.
